February 2022 Canning Classes

The February Class schedule is in for the Hernando County Cannery by the Hernando County Growers’ Association! The Cannery is located at 15487 Citrus Way in Brooksville, Florida. All classes are held on-site.

Cannery General Store is open Tuesday through Friday from 11 am to 5 pm and Saturday and Sunday from 11 am to 4 pm. The Farmer’s Market is open Sunday’s Year-Round from 11:00 A.M. – 4:00 P.M.

February 2022 Canning Classes

Sign up as classes fill quickly for some of these. 

What you get when you pay for a class:

1) Knowledge! You get to learn how to make a new recipe from scratch. You get to learn how to can that recipe. You get to learn how to utilize that canned product into a meal for you and/or your family.

2) You get a snack or meal, depending on what the class is! This is so you can taste what you made and to get one idea of how to use use that jar.

3) You get to meet new people and make new friends! Lots of people have made new and lasting friendships from our classes.

4) By purchasing a class, you are also supporting the Cannery! Every class helps keep our doors open by helping us pay our bills. We are a non-profit Organization and rely on donations, classes, grants, Cannery store purchases and Volunteers to keep us up and running. 

5) You get to shop in our Cannery store and check out what local small businesses have to offer while waiting for your jars to process. Every purchase helps a local small business and helps support the Cannery!

6) You always go home with 1 jar of what you made that day, a recipe to make it again on your own and the hands on experience!

Chicken Pot Pie Filling

Hot Sauce

Description: Some like it hot! Join us as we prepare and preserve traditional hot sauce from scratch. During processing time we will also demonstrate how to make fermented hot sauce at home!

Asian Chicken Meal Starter

Description: In this class you will learn how to make an Asian Chicken Meal Starter. This is a great meal starter, as it can be used to make several dishes! This can be used to make a quick chicken fried rice and its so good!

Ratatouille

Description: In this class you will learn how to make and can Ratatouille! This colorful recipe is fantastic served over pasta or simply heated and scooped up with a good, crusty bread. It is full of peak summer flavors that are especially rich because in this version of ratatouille the vegetables are broiled before the rest of the sauce is made.

Canned Oranges

Dixie Relish

Date: 2-26-2022

Time: 10 am – 1 pm

Description: This sweet cabbage relish is a classic spring canning staple in the south. Pickling cucumbers are just getting started as we are harvesting all of the cabbage from the garden. Plus you can only eat so much sauerkraut! Join us to learn the recipe for classic Dixie Relish.

Back to Basics – Meat

Date: 2-26-2022

Time: 2 pm – 5 pm

Teacher: Katie

Description: Back to Basics is a series for new canners that are interested in how to can basics for home. In this class we will discuss how to pressure can basic meats that are shelf stable. We will be canning chicken and ground beef. We will discuss how these products can be used in recipes at home and answer any questions that students have about safely canning meat products.

All Students will go home with a jar of product made in class.
