February 2023 Canning Classes Now Available at Hernando Little Rock Cannery

The January Canning Class schedule is now available at the Hernando Little Rock Cannery, 15487 Citrus Way in Brooksville. Sign up as classes fill quickly for some of these.

What you get when you pay for a class at the Hernando Little Rock Cannery:

  • Knowledge! You get to learn how to make a new recipe from scratch. You get to learn how to can that recipe. You get to learn how to utilize that canned product into a meal for you and/or your family.
  • You get a snack or meal, depending on what the class is! This is so you can taste what you made and to get one idea of how to use that jar.
  • You get to meet new people and make new friends! Lots of people have made new and lasting friendships from our classes.
  • By purchasing a class, you are also supporting the Cannery! Every class helps keep our doors open by helping us pay our bills. We are a non-profit Organization and rely on donations, classes, grants, Cannery store purchases and Volunteers to keep us up and running.
  • You get to shop in our Cannery store and check out what local small businesses have to offer while waiting for your jars to process. Every purchase helps a local small business and helps support the Cannery!
  • You always go home with 1 jar of what you made that day, a recipe to make it again on your own and the hands-on experience!

Week 1 – Water Bath Canning – Salsa

Sunday February 5, 2023 – 3 pm to 6 pm

In this class, you will learn how to make salsa from scratch!

Week 2 – Water Bath Canning – Jam or Jelly (TBA)

Sunday February 12, 2023  – 3 pm to 6 pm  

In this class we will be learning to make an in season Fruit Jam or a jelly. The jam will be announced as we get closer to the class so we can see what the local farmers will have available.  

Week 3 – Pressure Canning Vegetables – Maple Candied Carrots  

Sunday February 19, 2023 – 3 pm to 6 pm  

This class we will be pressure canning in season Vegetables. We will discuss how the vegetables you use will determine the time needed for processing.  In this class you will learn how to make Maple Candied Carrots!

Week 4 – Pressure Canning Recipes – Taco Meat

Sunday February 26, 2023 – 3 pm to 6 pm

In the final class for the course we will make Taco Meat! It is always nice to have a jar of Taco Meat on the shelf to add to taco shells or make taco salad from!!

All classes are non-refundable. Total cost for the course is $150.

Beef Stew

Date: Saturday February 4, 2023
Time: 10:30 am to 1:30 pm

Description: In this Class we will prepare and can beef stew with hearty vegetables. We will also make homemade biscuits. All Students will go home with a jar of product made in class. This is a hands-on class.
Price: $50 per person

Hamburger Stew

Description: You will learn how to prepare and cook then pressure can Hamburger stew. It is a great quick meal for those busy nights or a great lunch.
All Students will go home with a jar of product made in class. This is a hands-on class.

Baked Beans

Chicken Corn Soup

Date: Wednesday February 15, 2023

Description: When you open a jar of homemade chicken corn soup, it can be heated and served as is, or amended with other ingredients. Consider adding cooked rice, noodles, fresh herbs, and leftover vegetables you may have in the refrigerator when heating this recipe up to serve!

All Students will go home with a jar of product made in class. This is a hands-on class.

Mongolian Beef

Description: In this class you will learn how to make and can Mongolian Beef. This meal is great served over rice! As always, we try what we make in class =)

Hearty Chicken Stew

Description: In this class you will learn how to make and can Chicken Stew! This recipe can also be used to make chicken pot pies! You would just need to make the pie crust then add this to it and bake.

February 2023 Canning Class Schedule Now Available at Hernando Little Rock Cannery

Each month, the Hernando Grower’s Association holds classes to teach residents how to prepare and preserve food using traditional canning methods in the Hernando Little Rock Cannery commercial kitchen, located at 15487 Citrus Way in Brooksville.
