January 2023 Canning Classes Now Available at Hernando Little Rock Cannery

The January Canning Class schedule is now available at the Hernando Little Rock Cannery, 15487 Citrus Way in Brooksville. Sign up as classes fill quickly for some of these.

What you get when you pay for a class at the Hernando Little Rock Cannery:

  • Knowledge! You get to learn how to make a new recipe from scratch. You get to learn how to can that recipe. You get to learn how to utilize that canned product into a meal for you and/or your family.
  • You get a snack or meal, depending on what the class is! This is so you can taste what you made and to get one idea of how to use that jar.
  • You get to meet new people and make new friends! Lots of people have made new and lasting friendships from our classes.
  • By purchasing a class, you are also supporting the Cannery! Every class helps keep our doors open by helping us pay our bills. We are a non-profit Organization and rely on donations, classes, grants, Cannery store purchases and Volunteers to keep us up and running.
  • You get to shop in our Cannery store and check out what local small businesses have to offer while waiting for your jars to process. Every purchase helps a local small business and helps support the Cannery!
  • You always go home with 1 jar of what you made that day, a recipe to make it again on your own and the hands-on experience!

January Introduction to Canning 4 Week Series

This is a four-week hands-on preservation course that involves both water bath and pressure canning. The course will focus on safe canning practices including sterilization, how to properly fill jars, how to ensure a proper seal, and how to process using both methods.

Everyone will go home each week with a jar of what is made in class. We also always taste what is made so you have an idea of what to expect.

Please bring a small box to transport your jar home in.

Week 1 – Water Bath Canning – Sweet Cucumber Relish

Sunday January 8, 2023 – 3 pm to 6 pm

In this class you will learn how to make a sweet cucumber relish. This relish is great for using on hot dogs and sausages, Salmon, deviled eggs and you can add it to tuna, chicken or even ham salad.  

Week 2 – Water Bath Canning – Jam or Jelly (TBA)

Sunday January 15, 2023 – 3 pm to 6 pm  

In this class we will be learning to make an in season Fruit Jam or a jelly. The jam will be announced as we get closer to the class so we can see what the local farmers will have available.  

Week 3 – Pressure Canning Vegetables – Vegetable Soup  

Sunday January 22, 2023 – 3 pm to 6 pm  

This class we will be pressure canning in season Vegetables. We will discuss how the vegetables you use will determine the time needed for processing.  In this class you will learn how to make from scratch Vegetable Soup and pressure can it.  

Week 4 – Pressure Canning Recipes – Beef Stew

Sunday January 29, 2023 – 3 pm to 6 pm

In the final class for the course we will make Beef Stew. Nice and easy meal in a jar that you can just heat and eat!!

All classes are non-refundable.

Basil Diced Tomatoes

Description: In this class, you will learn how prepare diced herbed tomatoes to can in the pressure cooker. These can be used in Chili, sauces, soups and salsa.

Mexican Beef Garden Soup

January 2023 Canning Class Schedule Now Available at Hernando Little Rock Cannery

Each month, the Hernando Grower’s Association holds classes to teach residents how to prepare and preserve food using traditional canning methods in the Hernando Little Rock Cannery commercial kitchen, located at 15487 Citrus Way in Brooksville.
